Crostata di Visciole recipe for 16 servings:
- 400 g of cherries
- 300 g of sugar
- 2 nails
- 1 cinnamon stick
- 310 g of flour
- 2 eggs
- 150 g of butter
- 2 tablespoons of milk
- 1 pinch of salt
Besides :
- Icing sugar for dusting
- Whipped cream to taste
- Flour to roll out the dough
- Butter for the mold
Wash and pit the cherries. Bring them to a boil in a saucepan with 150 grams of sugar, the cloves, and the cinnamon stick. Simmer for about 10 minutes. Then remove the cloves and cinnamon.
Dissolve 1 tablespoon of flour in cold water and combine it with the cherry compote. Let it cool.
Crack 2 eggs and separate the yolk from the white. Reserve the white for another occasion.
Prepare a shortcrust pastry with the remaining flour, butter, milk, egg, yolk, and salt. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
Roll out 2/3 of the dough on a floured surface and place it in a greased springform pan (26 cm in diameter). Form a pastry border around it. Preheat oven to 175°C.
Pour the cherry mixture onto the tart shell. Roll out the remaining pastry, cut it into diamond shapes, and arrange them on top of the cherries. Bake for about 35 minutes. Sprinkle with powdered sugar and serve with whipped cream.
