I've never made this kind of pudding in my life, and I don't understand why. It's so delicious and not very difficult to make. It's made in a bain-marie in the oven, and thanks to this technique, the structure is very interesting.

It's golden brown on top, then a layer of very fluffy and soft sponge cake forms, and on the bottom is a very, very good lemon curd. I highly recommend it. You can enjoy it with your favorite organic teas or infusions .

Ingredients for 1 liter of Lemon Pudding

  • 50 gr of butter at room temperature
  • 200 g of sugar
  • the zest of 1 lemon and
  • 100 ml of its juice
  • 3 eggs, separated into yolks and whites
  • 50 gr of sifted flour
  • 250 ml of vanilla milk

Preparation of Lemon Pudding

Preheat the oven to 175°C (350°F). Grease a pudding tin. Beat the butter with the sugar and lemon zest until pale. Add the lemon juice, flour, egg yolks, vanilla, and milk.

Stir well to obtain a smooth batter. Beat the egg whites until stiff and gradually incorporate them into the mixture, stirring gently with a spatula. Pour the batter into the mold or molds.

We pour them into another larger mold filled with hot water, so that the water covers approximately half of the pudding mold. Bake in the center of the oven for about 40 minutes if using the entire 1-liter mold.

If you use smaller molds, it will take a little less time. You can serve it warm with a little whipped cream, or cold, which I personally prefer :)

Accompany with an organic black tea , a white tea with ginger and lemon , or a hemp infusion .
