Recipe for Galettes Tétique with Plums

Seeing so many plums in every fruit shop, I decided to make a dessert where that fruit takes center stage. I'm crazy about fruit in desserts, and this dessert in particular is delicious! The recipe is easy and fairly quick. It takes about an hour and a half to make. The aroma is spectacular; the touch of rosemary and lemon zest, along with the acidity of the fruit and the sweetness of the honey, make a unique combination.

Ingredients for the dough (6 galettes):

  • 350 gr of flour
  • 1 pinch of salt
  • 4 tablespoons of sugar (I would add a little less)
  • 120 g of butter
  • 70 ml of very cold water

For the filling: 6 blue plums, 6 yellow plums, 2 medium sprigs of rosemary, 5-6 tablespoons of honey and the zest of half a lemon.

Preparation: Prepare the dough. Mix flour with salt and sugar. Add cold, diced butter.

Let's knead. Add very cold water and knead. Form a ball, wrap it in plastic wrap, and refrigerate for half an hour. Meanwhile, wash the plums. Remove the pits and cut each half into quarters.

Finely chop the rosemary and add it to the plums with the honey and mix. Remove the dough. Roll it out to 2-3 mm thick. Create circles with a diameter of about 12 cm. Place the plums in the dough and seal the edges. You can drizzle with a little liquid to make the galettes juicier.

Preheat the oven to 200°C. Bake for 25-30 minutes. Add lemon zest 5 minutes before the end of baking.
