I love panellets! But for some reason, I always thought they were very difficult to make. But I was wrong! I found the recipe on Directo al paladar, and the first thing that surprised me was that the pastry base is made from boiled potatoes! And the rest of the dessert is much simpler, so much so that we made it very quickly and they are really delicious! I only made half the amount, and for a small family, it's more than enough.

Ingredients:

  • ½ kilo of ground raw almonds
  • 150 gr pine nuts
  • 125 g grated coconut
  • ½ kilo of sugar
  • 250 grams of cooked potato
  • grated peel of a lemon
  • 2 whole eggs and one yolk.

For the panellet varieties, this time we will use 150 grams of pine nuts, 150 grams of chopped almonds, and 125 grams of grated coconut.

Preparation: Start by boiling the potato in its skin. When it's ready, peel it and mash it with a fork. Add the sugar (I used a little less, as I prefer a bit less sugar), then add the almonds and lemon zest, and mix everything well.

Add the two egg yolks and mix. Reserve a third of the dough to mix with a little coconut. Form balls and first roll them in the egg whites and then in the pine nuts or chopped almonds. Place them on the baking sheet.

We mix the reserved portion with the coconut and coat it with the coconut. Finally, we spread the pine nut and almond balls with the egg yolk. Preheat the oven to 170°C and bake for 15-20 minutes. They're ready and delicious!

Now you're probably wondering what drink to serve with panellets. Well, we think that for such a smooth and special dessert, the simplicity of a delicate organic Tétique chamomile infusion or an intense Pennyroyal Mint would suffice. Would you prefer tea? Cinnamon Cream Rooibos also pairs perfectly. If you want a boost of energy and to cleanse your body, energizing green tea is a unique beverage.
