Tétique Recipe for Tartlets with Red Berries

Today we made these tartlets with cream and fresh berries to enjoy with our favorite organic tea . And we want to share the recipe with you.

Ingredients for the dough:

  • 225 g of butter at room temperature
  • 100 g of sugar
  • 1 egg
  • 330 g of flour
  • 20 grams of cornstarch with vanilla flavoring

For the cream: 500 ml of milk, 2 eggs, 100 g of sugar, 30 g of cornflour, vanilla, 50 g of butter, 200 g of whipping cream

Preparation: Mix the butter and sugar. It's best to do this with a mixer. If you don't have one, you can do it by hand. Add the egg and mix. Then add the flour, cornstarch, and vanilla.

Knead the dough well, form it into a ball, flatten it until it reaches 3 cm thick, wrap it in plastic wrap, and refrigerate for an hour.

After removing the dough from the refrigerator, divide it into three parts and roll it out between two baking sheets to a thickness of approximately 3 mm. Shape the dough into round shapes that are much larger than your baking tins. (We used muffin tins.) Form the tartlets and trim any excess that sticks out of the tin to make them look nice. Place the tartlets in the refrigerator for half an hour and then bake in the oven for 15-20 minutes at 180°C.

You have to work quite quickly with this dough as it can fall apart if you take too long. In the meantime, prepare the cream: In a saucepan, pour the milk, add vanilla (it's best to use fresh vanilla), clean the inside, add the seeds and also the cut log in the milk.

Place over medium heat and remove from heat when it begins to boil. Meanwhile, beat the eggs with sugar and cornstarch. In the same bowl, add the milk, passing it through a medium-sized sieve, stirring constantly. Return the saucepan to the heat and stir constantly until thickened.

Once it comes to a boil, cook for about 2 minutes and remove from heat. Pour the cream into a bowl and cover with plastic wrap so that the plastic touches the cream. Let it cool completely.

Once the custard has cooled, whip the cream until peaks form and mix everything together with a spoon. Now we're ready to assemble our tartlets. Fill the tartlets with the cream using a piping bag and top with fresh berries. For a more sophisticated touch, you can sprinkle them with powdered sugar.
