A cake is always the star of any birthday party, as it's the most anticipated moment of the ceremony. Not to mention that a slice of cake is always a welcome addition when guests are hosting dinner, lunch, or even just a snack at home. That's why this Tétique Recipe for Schwarzwälder Kirschtorte, or "Black Forest," will be perfect for you. Paired with an organic Tétique tea or infusion , it will make a great impression on everyone.
I divided the preparation into two days. One day I made the chocolate cake and the sour cherries, and the next day, about three hours before serving, I added the filling and cream. It's a very rich and beautiful cake. The cake recipe was brilliant, something different from the classic, fluffy cake; it was more moist and tender. I encourage you to try it.
Ingredients for the cake of about 23 cm in diameter:
- 2 eggs
- 320 g of sifted flour
- 10 g of baking powder
- 1/2 teaspoon of baking soda
- 40 gr of cocoa
- 440 g of sugar
- 180 ml of milk
- 100 vegetable oil
- 160 ml of boiling water
Preparation:
Preheat the oven to 180°C. Mix the dry ingredients, then add the eggs, milk, and butter. Beat very well for about 30 seconds and finally add boiling water. Beat again. The batter will be quite runny. I poured all the batter into the same pan, although you can do it separately (divide the batter into three parts for three cake layers), and then divided it into three parts. It took about 40 minutes to bake, depending on your oven and the size of the pan.
For the icing:
- 250 g of frozen cherry
- sugar about 3-4 tablespoons
- 50 ml of liqueur or rum (I had the typical Lisbon cherry liqueur - Ginja)
In a bowl, mix sugar with liqueur and heat over low heat until the sugar melts. Add the cherries and let it simmer for 3-4 minutes. Then remove and store the best ingredients overnight. Before assembling the cake, it's best to drain the cherries over a colander to remove any excess liquid. Reserve the juice.
For the cream:
- 300 g of mascarpone
- 300 ml of whipping cream
- 100 g of icing sugar
We mix all the ingredients and beat until a firm, fluffy cream forms.

We assemble the cake
We divide the cake into three parts. We place the first layer and pour over the cherry juice we prepared earlier. (I was afraid of going overboard with the liqueur, so I only brushed it over the surface of the cake, but I could have probably added much more.) We put a generous amount of the cream on top and place the same cherries on top. We place the second layer on top and repeat the same process. We rub the last layer with the liqueur and pour over the cream and decorate to our liking. It goes great with fruit; cherries would be the most common.
Now this delicious cake needs to be washed down with a drink that's worthy of its appeal. I'm thinking a rosehip infusion might be perfect. Although an organic Tétique chai tea or English black tea is also great.
