One of the things that makes me feel most at home is the food I make myself. Now, it's our custom to always have a pastry ready, so we can have a cup of tea or coffee and enjoy a sweet treat.
That's why I'm bringing you this recipe for a very simple cake, and the best part is that you can make it with seasonal fruit. I used apricots. And I decided to enjoy it with a nice cup of Tétique organic tea .
Ingredients:
- 3 apricots
- 180 gr of sugar + 2 tablespoons (I used brown sugar)
- 80 gr of butter at room temperature
- 1 egg
- 125 g of natural yogurt
- 160 g of flour
- 80g almond flour (you can use regular flour, but the flavor will change)
- 1/2 teaspoon baking soda
- 1 teaspoon of vanilla chemical leavening agent
Preparation:
We cut the apricots into chunks and sprinkle them with two tablespoons of sugar. Set aside.
We combine the sugar with the butter and beat.
Add the egg, yogurt, vanilla, flour, almond flour, baking powder, and baking soda. Beat for about 2 minutes.
Preheat the oven to 175°C and bake for 10 minutes. Then lower the temperature to 160°C and bake for another 30-40 minutes. Check for doneness with a toothpick.
