On the palate, it can range from slightly bitter and astringent to fresh, fragrant, grassy, and slightly sweet. Due to the strong sunlight during its cultivation, Sencha develops a high content of bitter substances, particularly catechins, which are attributed with many positive health effects.
It also has fewer amino acids, which are responsible for caffeine tolerance, in green tea compared to coffee or black tea .
