Ingredients : For the cream cheese:
- 6 dates
- 400g silken or soft tofu
- 150 ml of water
- 2 tablespoons of lemon juice
- 175g total of coconut, ginger and honey syrup
- 3 tablespoons of cornstarch
- 2 tablespoons of coconut oil
- A few drops of vanilla essence
- 2 tablespoons of nutritional yeast
- A pinch of salt
For the base:
- 1 cup of dates
- 1 cup of almonds
- 1 cup of oat flakes with or without gluten
- 2 tablespoons of coconut oil
For the red fruit topping:
- 250g total of frozen red berries, strawberries and mango
- 2-3 tablespoons of coconut syrup
- 1 tablespoon of chia seeds
- half a cup of water
- 25 g of vegetable butter
Preparation :
– We start by preparing the cake base by blending all the ingredients in the food processor or chopper, but without turning them into a paste.
– In a preferably circular mold, pour the base and press it down with your hands until it's compact. Then, store it in the freezer while you cook the vegan cream cheese.
– Preheat the oven to 180ºC.
– In a food processor or blender, blend the dates, tofu, water, lemon juice, cornstarch, nutritional yeast, coconut oil, cornstarch, vanilla extract, syrups, and a pinch of salt until smooth.
- We remove the dates since they are only there to give it sweetness and flavor.
– We take the mold out of the freezer and pour the cream over the base.
– Then we put it in the oven (top and bottom) at 180ºC for approximately 1 hour depending on the oven.
– When the cake has set, that is, when it feels spongy to the touch, remove it from the oven and let it cool.
– It is advisable to let the cake cool before removing it from the mold because it could break.
– For the topping, place the frozen strawberries, berries, and mango in a saucepan along with the coconut syrup, water, and vegetable butter.
– We cook it over medium heat for approximately half an hour while stirring constantly.
– Turn off the heat and gradually add the chia seeds while stirring. Let it cool.
– Next, we spread the topping over our vegan cheesecake until it is evenly spread.
– Place the cake in the refrigerator and serve it when it's cold. We recommend leaving it there overnight because it will be even better!
